'Recipe Stock: 4 cups water Dried anchovies Dried kelp Dried shiitakes Scallion roots 1 lbs rice cakes 1/3 cup gochujang 1 tbsp gochugaru 1 tbsp soy sauce (I used 2 tbsp coconut aminos) 2 tbsp sugar Optional: 1/2 medium onion, sliced (I cooked in stock) 1 cup shredded white cabbage (I cooked in stock) 2 small carrots, julienned 3 green onions, julienne 1 and cut the other 2 in 3” pieces Enoki mushrooms 4 oz of fish cakes, sliced 1 pack of sweet potato vermicelli Directions: 1.) Boil for 15 minutes-it will reduce to 2.5 cups liquid-remove everything. (I sweated down my onion and cabbage before making the stock and let them cook with the stock-that’s optional you can add them with the other veggies) 2.) Once the stock is made, mix the gochujang, gochugaru, soy, and sugar to make the sauce-adjust gochugaru and sugar to taste. Add the rest of the ingredients and cook until your sauce is thickened and your rice cakes are tender. Things I used in this video: Howdy, and welcome to my channel!
